Michael Mina

Michael Mina’s story is one of migration, mastery, entrepreneurship, and an eventual return to the flavors that first shaped him. Born in Cairo and taken to the United States at two, he grew up in Ellensburg, Washington, where food remained a powerful connection to family and heritage. He entered restaurant kitchens as a teenager, then trained at the Culinary Institute of America while spending weekends at Charlie Palmer’s Aureole in New York. That combination of formal discipline and relentless practical learning prepared him for the opportunity that transformed his career: helping create AQUA in San Francisco, which opened in 1991 and quickly earned national attention.

At AQUA, Mina developed the precision, hospitality philosophy, and leadership habits that would define his work. He rose to executive chef and received two major James Beard Foundation honors: Rising Star Chef of the Year in 1997 and Best Chef: California in 2002. He later founded MINA Group, becoming not only an acclaimed chef but also an influential restaurateur and builder of hospitality concepts......
